Fried rice is perhaps one of most famous dish in Asian cuisine. There are many styles of fried rice or “com chien” in Vietnamese, Chinese, Japanese, Thai, Vietnamese… each has its own unique style and taste. The dish I share with you in this video is a personal family recipe passed down from my mother. It consists of Vietnamese pork sausage or “lap xuong”, carrots, peas and eggs. Our style of mixing eggs is different from others in that we mix the egg into the rice so that the rice grains are coated with egg, thus enrich the color and aroma of the dish. How to make egg fried rice with pork sausage, eggs, peas, carrots…
Fried rice is one of the favorites dishes for Vietnamese. To make a delicious flavorful dish, please follow the simple method in this video to create a fried rice dish that tastes great.
1 bowl of rice, that has cool (not hot)
1/3 cup of sausage. I prefer this brand, Mai Quế Lộ.
1/3 cup steamed peas
1/3 cup carrots
Salt, pepper, soy sauce, seasoning salt
Steam carrots about 10 minutes. Cut into the same size as the peas, like this.
Sausage steamed for about 10 minutes. Cut in size similar to peas, like this.
Heat pan with a bit of oil, add garlic, stir quickly, add in sausage, stir. Put in peas, and carrots. A little seasoning salt. Stir. These ingredients are prepared first and will be added later after the rice is fried. You see this mixture is ready. I will set it aside on a plate.
Want delicious fried rice, please note:
- Do not use too much oil; it will be too greasy. Hard to eat and digest.
- Do not over cook the garlic initially. Because it will be mixed in the rice later and continues to cook there. Too much heat will burn the garlic and create a bitter taste.
- Use high heat when frying rice. Stir aggressively to mix the ingredients and heat evenly.
- Use steamed rice that is not too dry or too moist (wet). Good cooked rice will make tasty fried rice.
- The cooked rice must be cooled before frying.
Add a little seasoning salt. I prefer this brand: Knorr (Marinade & Stir Fry Seasoning). You may also season with salt or “Maggi”. Do not use fish sauce. If your cooked rice is too dry, you can soften it up a bit with soy sauce. Add enough to accommodate your taste.
This rice is good. Soft and flexible, not wet, not dry. So I do not need to add Maggi seasonal sauce.
Eggs beaten like this. Add to rice and mix quickly. Many people fry the eggs separately; then add to the rice later. But I prefer to mix the eggs into the rice. This will coat the grains, and creates a nicer color and better aroma and taste. Add a pinch of salt and pepper.
Depending on your preference. If you like your fried rice a little crispy, then fry it a little longer. If not, then just fry until to you see the grains heated and fried.
Add sausage, peas, carrots and stir evenly. That’s it.
Note: If you do not eat right way, and you want to keep the rice hot, you can put it in a rice cooker and turn on “keep warm”
Put it on a plate and add decorative items depending on your preference, like vegetables, tomatoes…
